Aloe Vera Mocktail

Known in Ayurveda as kumari and “the plant of immortality,” aloe vera is prized for being one of the most nourishing “bitters” on the planet. Because the taste of bitter is so cold and anti-inflammatory, it can leave some people feeling stripped and dry. But not aloe! Aloe vera’s bitter taste soothes the skin and GI tract, encourages healthy elimination, and pulls excess fire from the body – making for a wonderful healing tonic when Pitta is on the rise. Mocktail, anyone?

Ingredients
  

  • 1 cup aloe vera juice
  • 1 cup young coconut water
  • 1 cup peeled and seeded chopped cucumber
  • 2 teaspoons freshly squeezed lime juice
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon raw honey

Instructions
 

  • Put the aloe vera, coconut water, and cucumber in a blender. Blend until smooth.
  • Strain through a fine-mesh strainer and return the aloe mixture to the blender.
  • Add the lime juice, cardamom, and honey and process for 20 seconds more before serving.

Notes

Note: Aloe vera juice is contraindicated when you’re pregnant. If you’re trying to conceive, feed your womb some super nourishing love by subbing out the aloe vera juice with aloe vera gel and wait to have the juice until after the baby is born.
Ayurveda Every Day Tip: To reduce Vata and Kapha, blend in 2 teaspoons of grated fresh ginger before straining, and substitute lemon juice for the lime. For Kapha, halve or omit the honey.
