Soak the rice in 4 cups of water for one hour and as long as overnight.
Wash and “scrub” the rice by rinsing it under running water for one minute, kneading the rice with your hands as you rinse.
Put the rice in a medium saucepan with the remaining 4 cups of water and salt.
Bring the rice to boil over medium-high heat.
Reduce the heat to low and simmer until the rice has absorbed all of the water, about 35 minutes.
During the final 5 to 10 minutes of cooking, use a clean towel to wipe off any condensation that forms on the inside of the pot lid and replace the lid over the rice. Repeat a few times.
Remove from heat, uncover, and allow the rice to cool for 5 minutes before stirring in the remaining ingredients. Serve warm.
